Mormonism and Philosophy by Clark at Mormon Metaphysics, quoting none other than Leo Strauss while offering a tentative explanation for why there is so little Mormon theology. Clark suggests (following Strauss) that whereas Christian dogma inclines practitioners of theology to acquire the tools of philosophy, Islamic and Jewish (and Mormon?) thinkers are instead directed to the methods and concepts of law. And speaking of law, you should also check out Mormon Jurisprudence and Apostasy by Steve at BCC, suggesting that LDS church court practice and procedure resembles that of continental civil law rather than Anglo-American common law.
